A Bode-take on a Halloween favorite!
The only trick this Halloween is how much you AND your kids will love these peanut butter cups. I don’t know about you, but we will be replacing the trick-or-treating candy scaries with this simple (healthy) no bake alternative. Did I mention low carb, low sugar, vegan and gluten free?
With a dark chocolate shell, the treats keep treating with added benefits like mood, brain function, skin protection, gut health and much more. A nice reward for something you intended to eat anyways!
Everything you’ll need to make Bode-oween peanut butter cups:
1/4 c peanut butter (or almond butter)
3 tbs mashed sweet potato
3 dates
1-2 tbs maple syrup (based on desired sweetness)
3 tbs almond flour
2 tbs coconut oil (melted)
1/2 - 1 cup chocolate chips melted with a spoon of coconut oil (we like dark chocolate!)
Mix / blend all ingredients together minus the chocolate
Melt chocolate and coconut oil
Pour into pumpkin mold to coat the bottom and put in freezer for 15-30 min till hardened
Fill with sweet potato filling and top with rest of melted chocolate
Return to freezer for 1 hour or more till chocolate has hardened
Put in fridge 30 min before serving to soften
ENJOY!
